Unlike beef which differs with cut and personal preference, it's best to always cook lamb medium unless you're slow cooking. Storage: In a commercial cold store this product will retain its quality until the best before date shown. In a deep freeze cabinet operating at a temperature of -18°C or colder this product will retain its quality for 3 months after purchase or up to the best before date whichever is sooner. Freeze and Thawing Guidelines: Allow to thaw in a refrigerator for approximately 24 hours. Once defrosted keep refrigerated and consume within 48 hours. Do not refreeze after thawing. Food Safety: If cooking rare Food Standards Agency advice is to ensure the meat is properly sealed.
