Guidelines for cold preparation: 1. Following the table below, add the mix to cold water and whisk. 2. Leave to stand for 10 minutes until the mixture has fully thickened, then re-whisk. 3. Product can be heated for immediate use, or chilled and held for up to 120 hours (5 days) below 5°C 4. Before consumption, the product must be heated until the temperature at the centre is at least 75°C 5. Once heated do not re-chill and re-serve. Guidelines for hot preparation: (Batches of 11 servings give the best results) 1. Following the table below, add the mix to boiling water and whisk thoroughly. 2. Allow to stand for one minute and then serve. Yield Guide: Approx. No of 100g servings: 11 / 116 Mashed Potato Mix: 200g / 2kg Cold or Boiling Water: 960ml / 9.6 ltrs
